New Orleans World Famous Chefs
Cajun-Creole cooking began in Acadia, near present day Nova Scotia. France colonized Acadia in 1604 and control over the land shifted between France and Great Britain for over two centuries. In 1785, the British finally gained control and forced the Acadians to leave. The Acadians settled in Louisiana where their name was translated into ‘Cajun.’ Cajun cooking is a mixture of French and southern US influences; it relies on pork fat and spices. Shellfish, such as crawfish, crab, and shrimp, from the South Louisiana swamps, are mixed with local spices such as cayenne pepper. Creoles are descendants of rich Europeans that established in New Orleans.
